Ingredients: 1 pound, white mushrooms, wiped clean, trimmed, and broken into rough pieces; 1 tablespoon, mustard seeds (see note); 2 teaspoons, cumin seeds (see note); 3 tablespoons, vegetable oil; 1 , medium onion, chopped medium; 9 , medium garlic cloves, minced or pressed through a garlic press (about 3 tablespoons); 1 tablespoon, minced chipotle chile in adobo sauce; 3 tablespoons, chili powder; 2 1/2 cups, vegetable broth; 2 1/2 cups, water, plus extra as needed; 1 pound, dried black beans, picked over and rinsed; 1 tablespoon, light brown sugar; 1/8 teaspoon, baking soda; 2 , bay leaves; 1 (28-ounce) can, crushed tomatoes; 2 , red bell peppers, stemmed, seeded, and cut into 1/2-inch pieces (see illustrations below); 1/2 cup, minced fresh cilantro leaves; , Salt and ground black pepper; , Lime wedge, for serving
