Ingredients: 3 pounds, beets, trimmed; 3 cups, cider vinegar; 2 cups, water; 1 cup, sugar; 1 (3-inch) piece, fresh ginger, peeled and sliced thin; 3 , star anise pods; 1 teaspoon, canning and pickling salt; 1 teaspoon, black peppercorn

We wanted to create a recipe that had nothing in common with the often one-dimensional and cloying pickled beets that line supermarket shelves.

SERVES 12, makes four 1-pint jars
