Salmon with Asparagus and Herb Vinaigrette
Why This Recipe Works
To ensure a good sear on the fish in our Salmon with Asparagus recipe, we patted our salmon fillets dry before adding them to the pan over medium-high heat. After they had achieved a nicely browned crust, we reduced the heat to medium. This kept the texture from turning dry and chalky. For a side dish, we opted for thicker asparagus spears, which we cooked in a covered pan in a combination of oil and butter until they were browned on one side and perfectly cooked.
