Individual Raspberry-Pistachio Buckles
Why This Recipe Works
We experimented with a few different techniques for our raspberry-pistachio buckle recipe before settling on the food processor, in which we whipped up the batter in seconds. We then transferred the batter to a large bowl before stirring in ripe raspberries. The batter we liked best for our buckle recipe was sweet enough that we felt a streusel would have been too much—coals to Newcastle as it were. A crunchy topping was a must, however, and we settled on pistachios, which toasted as the buckle baked. To further the nut flavor, we added some to the batter as well—each bite of the buckle had both berries and nuts in it. While the buckle baked fine in a large dish, we much preferred it baked in individual ramekins, as the small size allowed the batter to firm up better.
