Pork Stew with Fennel, Leeks, and Prunes
Why This Recipe Works
While developing our pork stew recipe, we worked our way through several different cuts before we deemed pork butt the best bet. Timing proved to be a real issue with the pork stew recipe. When we added the fennel and carrots along with the pork, they completely overcooked by the time the meat was tender. After much trial and error, we decided to give the pork a one-hour head start before adding the vegetables. In the remaining hour it took the meat to cook, the vegetables became perfectly tender.
