Polenta Casserole with Sautéed Mushrooms, Blue Cheese, and Walnuts
Why This Recipe Works
After testing several types of polenta for our polenta casserole recipe, we found that instant polenta is much easier and takes only 10 minutes. With the substitution of milk for some of the water and a little bit of butter stirred in at the end, it tasted great. For the mushroom topping on our polenta casserole recipe, we found that variety is the key to achieving a good mushroom flavor: Portobellos offered a hearty bite, inexpensive white mushrooms helped to bulk up the yield without costing a fortune, and the intense flavor of dried porcini mushrooms really helped drive home a serious mushroom flavor.
