Why This Recipe Works
Stir-fry sauces typically contain soy sauce and are quite salty. For that reason, we found it best to skip the salting step for our eggplant stir-fry recipe. Small, firm eggplants, sometimes labeled Asian eggplants, worked best. Rather than dicing them, we achieved the best results when we cut them in half lengthwise and then crosswise into 1/2-inch-thick half-moons.
