We wanted a dense, rich sauce to serve with rich-textured fish such as grilled shrimp or scallops. Hoisin sauce mixed with sesame oil, soy sauce, and orange juice turned out to be just the right combination.

Serves 4 (about 1/2 cup)

This dense, rich sauce is best with rich-textured fish such as grilled shrimp or scallops; it's also great with salmon. Just before serving, you can sprinkle thin sliced scallions and toasted sesame seeds over the sauce.
