Why This Recipe Works

The combination of dried herbs, toasted sesame seeds, and tart, citrusy sumac makes for an earthy yet brightly flavored seasoning.

2 tablespoons dried thyme
1 tablespoon dried oregano
1 ½ tablespoons sumac
1 tablespoon sesame seeds, toasted
¼ teaspoon salt

Instructions

Makes about 1/3 cup

Try sprinkling some of this Middle Eastern spice mix over olive oil as a dip for bread. You can also use it in grain dishes or as a flavorful topping for hummus or other dips.

Process thyme and oregano in spice grinder or mortar and pestle until finely ground and powdery. Transfer to bowl and stir in sumac, sesame seeds, and salt. (Za’atar can be stored at room temperature in airtight container for up to 1 year.)
