Name: Turkey Meatballs with Soy and Sesame

Ingredients: 1 1/2 cups, chicken broth; 1/2 ounce dried, shiitake mushrooms; 2 slices, hearty white sandwich bread, torn into 1-inch pieces; 1 ounce, Parmesan cheese, grated (1/2 cup); 6 , scallions, white parts minced, green parts sliced thin on bias; 1 tablespoon, sugar; 2 1/2 teaspoons, unflavored gelatin; , Salt; 1 1/2 teaspoons, white pepper; 2 , anchovy fillets, rinsed and patted dry; 1 1/2 pounds 85 or 93 percent lean, ground turkey; 1 , large egg, lightly beaten; 2 tablespoons, water; 3 tablespoons, vegetable oil; 2 , garlic cloves, minced; 1 tablespoon, soy sauce; 2 teaspoons, sesame oil
