Ingredients: 1 cup of Roasted Tomatoes, recipe, chopped coarse, plus 1 tablespoon reserved tomato oil; 1 , small shallot, minced; 1/4 cup, chopped fresh cilantro; 3/4 teaspoon, red wine vinegar; 1/2 teaspoon, capers, rinsed and minced
