Name: Classic Poached Salmon Steaks
Yield: Serves 4
Ingredients: 2 quarts, cold water; 1 cup, cider vinegar or white wine vinegar; 1 tablespoon, table salt; 1/2 , medium onion, chopped coarse (about 1/2 cup); 1 , medium carrot, chopped coarse (about 1/2 cup); 4 , salmon steaks (about 1-inch thick), boned and formed into medallions (see illustrations in related How to Cook and Serve Salmon )
