Why This Recipe Works
For our grilled Argentine-style short ribs recipe, we turned to a technique used in Korean recipes for grilled short ribs. We butterflied the meat, cutting it open like a book, which reduced its thickness to a mere 1/2 inch and exposed its internal fat so that it would render while cooking. This presented the perfect grilled short ribs recipe: We could cook the butterflied short ribs quickly and to an ideal degree of doneness, with nice exterior charring and a tender but pleasantly chewy texture.
