Potato and Cheese Filling for Polish Dumplings
Why This Recipe Works
After experimenting with proportions for our pierogi recipe, we landed on the perfect formula of flour, eggs, water, and oil for structure and tenderness. For the filling, we first mixed mashed potato with cheddar cheese and farmer’s cheese, then added butter for richness. Next, we developed a mushroom filling for our pierogi recipe using white mushrooms, dried porcini mushrooms, and sour cream, as well as a meat filling with ground beef and pork. Caramelized onions are traditionally served with pierogi so, since all three fillings included onions, we decided to cook the onions in one batch and add a portion of them to the filling.
