Glazed Oranges in Caramel-Orange Sauce
Why This Recipe Works
For the best glazed oranges recipe, we caramelized sugar with a cinnamon stick and cloves in a saucepan until deep amber in color, adding fresh orange juice to make a pourable syrup. We tried simply adding the slices to the cooled syrup and letting them marinate, we tried adding them to hot syrup, and we tried poaching them in a saucepan, but we got the best results for our glazed oranges recipe by placing the slices in a baking dish, pouring the hot syrup over, and baking them. The gentle, even heat of the oven softened the oranges just enough so that they were silky and tender, but not soft and mushy.
