Broiled Mozzarella and Sun-Dried Tomato Skewers
Why This Recipe Works
For a warm mozzarella and tomato antipasto recipe, we came up with the idea of creating skewers of cheese and tomatoes, to be broiled until just beginning to melt. We tried skewering chunks of mozzarella with pieces of fresh tomatoes, but the tomatoes lacked the flavor intensity that we were hoping for, so we switched to dry-packed sun-dried tomatoes for our mozzarella and tomato skewers recipe, which we rehydrated in hot water until pliant and tender. Broiled for just a few minutes, the cheese formed strings for twirling around the tomatoes and basil.
