Roman-Style Stuffed Braised Artichokes
Why This Recipe Works
Traditionally, stuffed artichoke recipes have a stuffing of bread crumbs, herbs, garlic, and olive oil; we also included some grated lemon zest for a bright flavor accent. We filled the artichokes using a teaspoon, then worked on the best way to cook them, placing a few onion rings and parsley stems in the bottom of a Dutch oven, positioning artichokes on the onions, and adding water to partially cover the stems. We found that the braising liquid for our stuffed artichokes recipe was quite flavorful, so we reduced it, seasoned it with lemon juice, and served it as a sauce for dipping.
