Crystallized Ginger Ice Cream with Bittersweet Chocolate Sauce
Why This Recipe Works
We tried a radical idea for softening our vanilla ice cream before flavoring it with chopped crystallized ginger for our ginger ice cream recipe: placing the ice cream in a hot water bath. We filled a large bowl with hot water and then placed slabs of ice cream in another bowl that easily nested within the bowl filled with water. In just five minutes, our ice cream was soft enough to mix with the ginger. We preferred a mix of large and small pieces of ginger, so hand-chopping made more sense than chopping the ginger in the food processor for our ginger ice cream recipe.
