Simple Ice Cream Pie
Why This Recipe Works
We tested most everything that made sense in an ice cream pie recipe and thought Oreo cookies worked the best for the crust because their flavor was strong enough to stand up to just about any flavor of ice cream. We produced a few bumpy ice cream pies before we realized that the ice cream needed to be softened and whipped smooth with a wooden spoon before transferring it to the pan. As for topping our ice cream pie recipe, we tried freezing the whipped cream (flavored with a little sugar and vanilla) on top of the pie, but found its icy texture unacceptable; topping the pie thickly with the cream just before serving proved a much better approach.
