Ingredients: 1 , lemon; 4 , Bosc pears, or Bartlett, ripe but firm (about 8 ounces each); 1/2 cup, dry white wine (see note); 1/4 cup, sugar; 2 sprigs, fresh thyme; 1 , vanilla bean, halved lengthwise, seeds scraped out and reserved; 1/2 , cinnamon stick; Pinch, salt
