30-Minute Hearty Mediterranean-Style Fish Stew with Chorizo Sausage
Why This Recipe Works
We found that the real challenge in developing a great Mediterranean-style fish stew recipe lies in building a broth with enough flavor to carry the fish. With that in mind, we started our broth with a heady mixture of sautéed onion, fennel (which pairs particularly well with most any fish), and red bell pepper for a bit of sweetness and color. To this mix, we added six cloves of garlic and red pepper flakes for a burst of heat, along with smoky, robust-flavored chorizo, which hit all the right buttons. With a hearty base down, we added tomatoes, wine, and clam juice, the closest thing to fish broth most stores carry, and simmered the broth for about 10 minutes before sliding our fish—flaky cod—into the pot to poach.
