Why This Recipe Works
In search of the best West African sweet potato and peanut soup recipe, we determined that Beauregard sweet potatoes, the variety commonly sold in supermarkets, performed best in the soup. As a liquid in our peanut soup recipe, we liked chicken broth cut with some water to keep its flavor from overtaking the soup. We tried adding whole peanuts in the soup, but preferred the richness and roasted flavor of peanut butter—both creamy and chunky worked, as we pureed the soup at the end.
