Chicken and Pasta with Bacon, Peas, and Gorgonzola
Why This Recipe Works
For a chicken and pasta recipe with tender pieces of juicy chicken and sweet vegetables in a creamy sauce, we cooked the chicken with a little butter in a skillet until the meat just began to turn golden, and then removed it while it was still underdone. After building a sauce in the now-empty skillet, we returned the chicken to the pan and let it simmer in the sauce until fully cooked. As for the creamy sauce for our chicken and pasta recipe, we found we could cut the cream entirely by substituting a chicken broth and wine mixture thickened with roux. For maximum flavor, we added a bit of sautéed onion, garlic, and red pepper flakes.
