Why This Recipe Works
We knew that brining before cooking dramatically improves the taste and texture of shrimp, but we wanted a shrimp recipe that didn’t take so much time. We solved our problem by buying frozen shrimp (which are often much higher quality than fresh), and brining and defrosting them simultaneously. We also saved time by skipping deveining. In most medium to large shrimp, the vein is so tiny that you have to look for it in order to find it, and after cooking it virtually disappears.
