Ingredients: 7 pounds, sweet potatoes (6-8 medium); 5 tablespoons, unsalted butter, cut into 5 pieces and softened, plus additional for greasing pan; 1/2 cup, all-purpose flour (2 1/2 ounces); 1/2 cup, packed dark brown sugar (3 1/2 ounces); 1/4 teaspoon, table salt; 1 cup, pecans (4 ounces); 5 tablespoons, unsalted butter, melted; 2 teaspoons, table salt; 1/2 teaspoon, ground nutmeg; 1/2 teaspoon, ground black pepper; 1 tablespoon, vanilla extract; 4 teaspoons, lemon juice (from 1 lemon); , granulated sugar; 4 , large egg yolks; 1 1/2 cups, half-and-half
