Ingredients: 10 ounces (283 grams) frozen sliced, peaches, thawed, juice reserved, cut into approximate ½-inch pieces; ⅓ cup (2⅓ ounces/66 grams), sugar; ⅛ teaspoon, table salt; ¼ teaspoon, grated lemon zest plus 2 tablespoons juice; 4 teaspoons, cornstarch; 2 1/2 cups (12½ ounces/354 grams), all-purpose flour; 2 tablespoons, granulated sugar; 1 teaspoon plus pinch, table salt, divided; 20 tablespoons (2½ sticks), unsalted butter, halved lengthwise and chilled; 3/4 cup, ice water; 1 , large egg; 2 tablespoons demerara or, turbinado sugar (optional)
