Ingredients: 2 1/3 cups, warm water, preferably bottled spring water; 1 1/2 tablespoons, yeast; 1/4 cup, honey; 4 tablespoons, unsalted butter, melted; 2 1/2 teaspoons, table salt; 1/4 cup, rye flour; 1/2 cup, toasted wheat germ; 3 cups, whole-wheat flour, preferably Hodgson Mill Whole Wheat Graham Flour; 2 3/4 cups, unbleached all-purpose flour, plus extra for work surface and dusting rolls
