The Best Way to Sift Powdered Sugar

By Cook's Illustrated Published September 2012

A fine-mesh strainer and a light touch are all you need for perfectly coated confections.

Hold a fine-mesh strainer in one hand and gently tap its side with a finger from the opposite hand. (Do not shake the strainer itself; this will produce heavy spots.) Move the sieve over the next area to be covered and repeat.

For attractive, evenly coated results, the lightest possible touch is a must when dusting desserts with confectioners’ sugar.
