Rehydrating Toasted Dried Chiles

Rehydrating dried chiles will mellow their taste.

To concentrate their flavor, puree rehydrated chiles with onions, garlic, and tomatoes and cook in a little oil before adding them to a recipe.

1. Transfer seeded and stemmed toasted chiles to large bowl and cover with boiling water. Let sit, stirring occasionally, until chiles are softened but not mushy, about 20 minutes.

2. Transfer to blender and puree.
