How to Chop Fennel

We use the same technique to chop a fennel bulb as we do to chop an onion.

Start by removing any stalks and fronds from the top of the bulb and trimming a thin slice from the base. Then halve the bulb lengthwise and remove the core from the base of both halves.

1.  Using sharp chef's knife, make several evenly spaced horizontal cuts into fennel bulb, taking care not to cut through root end.

2.  Holding knife perpendicular to counter, make several vertical cuts, cutting up to but not through root end.

3.  Evenly slice fennel across previous cuts.
