Ingredients: 12 tablespoons, unsalted butter, cut into ½-inch pieces; 1/2 cup (3½ ounces/99 grams), granulated sugar; 1/2 cup packed (3½ ounces/99 grams), dark brown sugar; 1/4 cup, water; 2 tablespoons, light corn syrup; 1 teaspoon, lemon juice; 3/4 teaspoon, table salt; 1 cup, heavy cream, divided; 2 1/4 cups, whole milk, divided; 4 large, egg yolks; 1/4 cup, cornstarch; 2 teaspoons, vanilla extract; 1 teaspoon, dark rum
