While some tasters preferred the stronger cheeses when eaten alone, most preferred blue cheese dressing made with milder, less pungent cheeses.
We sampled eight well-known blue cheeses on their own and in a blue cheese dressing poured over greens. Eaten plain, each cheese had its fans, but tasters agreed that the milder cheeses were a better choice for a dressing. We rated cheeses based on the preferences expressed in the dressing test.
Two supermarket brands came in first and second; the winner earning points because of its "nicely balanced flavor" and "nice sweetness." The cheese coming in second was described as "bright," with a "good creamy and chunky balance."
While pricier blue cheeses such as Stilton and Gorgonzola also did well, the lower-priced versions scored higher, making them the logical choice for our dressing. Stronger, more intense cheeses did not fare well in our dressing taste tests.
