Tahini

Published May 1, 2008. From Cook's Illustrated.

Our favorite brands were pleasantly "tangy," "nutty," and "buttery."

Most often used to flavor Middle Eastern dishes such as hummus, or as a condiment for falafel, tahini is a thick paste made from ground sesame seeds. We tasted five supermarket brands, both straight from the jar and blended into our Restaurant-Style Hummus recipe. Tasters found our favorites pleasantly “tangy,” “nutty,” and “buttery.”
