Quick, Fresh Sauces for Asparagus

Published March 1, 2001.

In fewer than 10 minutes, you can have both perfectly broiled asparagus and one of these four quick sauces.

The Problem

Asparagus is a welcome accompaniment to a special dinner, deserving of a nice sauce-but we don't want to fuss with any complex preparations.

The Goal

To capitalize on the easygoing nature of asparagus and develop the quickest, lightest sauces we could.

The Solution

Broil the asparagus to concentrate the flavor and lightly caramelize its peel. While the asparagus cooks, whisk together a simple, flavorful vinaigrette, drizzle over asparagus, and serve immediately.
