Discovering Coffeecake Muffins

What does it take to make coffeecake in miniature?

The Problem

Most recipes for coffeecake muffins simply add a cinnamon-flavored streusel to the middle and top of a plain muffin—but the muffin’s crumb can be coarse and slightly chewy.

The Goal

We wanted a muffin with the light, tender, buttery crumb of coffeecake.

The Solution

Coffeecake recipes do not translate well to muffins—because of their shape, muffins require a stiffer batter. We decided to start with our muffin recipe and modify it by adding sour cream for richness and flavor. Adding a portion of the streusel mixture back into the prepared batter offset the rich, buttery flavor of the now moist cake. We also found we could use an easy quick-bread method to mix the batter—which we made even simpler by finishing the batter in the food processor.
