Chicken Parmesan is simple in concept but not in execution--after completing many steps and dirtying just as many pans, you're often left with soggy chicken cutlets and a mediocre sauce.

Crisp, flavorful chicken Parmesan in 30 minutes or less.

The Solution

Split chicken breasts into cutlets for faster cooking and even portions, dredge them in egg and bread crumbs (skip the flour), and sauté. To save time, top the dish off with a sauce made from crushed tomatoes and pregrated cheese.
