Caesar Salad Rediscovered

A coddled egg gives the dressing its distinctive smooth texture--or, if you prefer, soft tofu and a food processor can create a thick dressing without the egg.

The Problem

Caesar salad is a restaurant favorite, but many home cooks are afraid to make it because it can be difficult to prepare and carries the risk of exposing family or guests to salmonella in any contaminated raw eggs.

The Goal

Develop a simplified version of the original Caesar salad recipe that does not rely on raw eggs.

The Solution

For those who don't mind coddled eggs, use just one, and boil it for only 45 seconds. For those who would rather avoid eggs, substitute soft tofu for the best texture and flavor.
