Name: Chunky Roasted Tomato Sauce
Yield: Serves 4 to 6 (Makes 1 1/2 cups; enough for 1 pound pasta)
Ingredients: 2 tablespoons reserved, tomato oil, plus 1 1/2 cups Roasted Tomatoes, chopped; 1/2 , small onion, chopped fine; 1/4 teaspoon, table salt; 2 , garlic cloves, minced; 1/2 teaspoon, dried oregano; 1/8 teaspoon, red pepper flakes; 1/4 cup, grated Parmesan cheese; 1/4 cup shredded, basil; 1 1/2 teaspoons, red wine vinegar
