To update sour cream- and mayonnaise-based dip recipes, we used equal portions of mayonnaise and sour cream; the mayonnaise added body and richness, while the sour cream brought a bright freshness to the dip. Adding strong flavors like bacon, cilantro, feta cheese, or garlic to our dip recipe cut through the richness. Letting the dip sit for at least one hour or overnight allowed the flavors to develop.

Makes about 2 1/2 cups

Chipotle chiles en adobo are dried, smoked jalapeños packed in a tomato-vinegar sauce. If unavailable, substitute 1 medium jalapeño, 1 teaspoon ketchup, 1/4 teaspoon liquid smoke, and 1/4 teaspoon hot red pepper sauce (such as Tabasco) for the chipotles in this recipe.
