Name: Red-Wine Orange Sauce
Yield: Serves 10 to 12 (Makes 1 cup)
Ingredients: 2 tablespoons, unsalted butter; 2 , shallots, minced; 1 tablespoon, tomato paste; 2 teaspoons, sugar; 3 , garlic cloves, minced; 2 cups, beef broth; 1 cup, red wine; 1/4 cup, orange juice; 2 tablespoons, balsamic vinegar; 1 tablespoon, Worcestershire sauce; 1 sprig, fresh thyme; 4 tablespoons, butter, cut into 4 pieces and chilled
