Simmering cream and wine gave our Gorgonzola Cream Sauce recipe a velvety, rich base, and whisking in the gorgonzola thickened the sauce until it was the perfect accompaniment for our gnocchi recipe.

Makes about 1 cup, enough for 1 recipe Potato Gnocchi (related)

Adjust the consistency of the sauce with up to 2 tablespoons of gnocchi cooking water before adding the dumplings.
