Classic Guacamole

Name: Classic Guacamole
Yield: Serves 8 (Makes 2 cups)
Ingredients: 2 tablespoons, finely chopped onion; 1 , serrano chile, stemmed, seeded, and minced; 1 teaspoon, Kosher salt; 1/4 teaspoon, grated lime zest plus 1 1/2–2 tablespoons juice; 3 , ripe avocados, halved, pitted, and cut into 1/2-inch pieces; 1 , plum tomato, cored, seeded, and cut into 1/8-inch dice; 2 tablespoons, chopped fresh cilantro
