Name: Premium Dark Chocolate Mousse
Yield: Serves 6 to 8 (Makes 3 1/2 cups)
Ingredients: 8 ounces (227 grams), bittersweet chocolate, 62 to 70 percent cacao, chopped fine; 3 tablespoons, granulated sugar; 2 tablespoons, Cocoa powder, preferably Dutch-processed; 1 teaspoon, instant espresso powder; 7 tablespoons, water; 1 tablespoon, brandy; 3 , large eggs, separated; 1/8 teaspoon, table salt; 1 cup, heavy cream, plus 2 more tablespoons (chilled)
