There are no hard-and-fast rule for assembling these sandwiches, but here are some pointers. Condiments and spreads, about 2 tablespoons per sandwich, should be put on both sides of bread; this will help prevent the bread from becoming soggy. To keep a sandwich from becoming too big and unwieldy, use 3 to 4 ounces of meat and an ounce of cheese per sandwich. As to vegetables and other garnishes, be judicious -- they are there to lend texture and accentuate the main ingredient, not overwhelm it.
