Name: White Wine-Shallot Sauce with Lemon and Capers
Yield: Serves 2 (Makes about 1 cup)
Ingredients: 2 teaspoons, vegetable oil; 2 , large shallots, minced (about 1/2 cup); 1/2 cup, dry white wine; 1 - 2 tablespoons, lemon juice from 1 lemon (see note), plus lemon wedges for serving; 4 tablespoons, unsalted butter, cold; 1 tablespoon, capers, rinsed and drained; 1 tablespoon, chopped fresh parsley leaves
