Giving Steaks a Garlic Boost

To impart great garlic flavor to a steak, sometimes the meat needs to be treated like bruschetta.

Mixing minced garlic into a steak rub might seem like a logical way to incorporate that flavor. But when the garlic in our Mexican-Style Grilled Steak (see related content) burned, we came up with an alternative approach: treating the steak like bruschetta. Rubbing a smashed garlic clove over the grilled meat’s surface imparts a burst of flavor and aroma. Use the technique with any plain grilled or pan-seared steak.
