While nobody wanted to believe that a glorified sandwich press could out-perform a skillet, we had to acknowledge that the Sante Fe Quesadilla Maker by Salton neatly sequesters the cheesy fillings into six triangular sections and eliminates the need to flip the quesadilla. The problem is that the recipes that came with this device advised a paltry 1/4 cup cheese for two 10-inch flour tortillas—not nearly enough, in our opinion. When we ignored these stingy instructions and added more cheese, the cheese flooded into the moat surrounding the heating plates. So for our quesadilla needs—which include healthy amounts of queso—we'll stick with a skillet.
