Our favorite all-purpose baking dish isn't broiler safe; we need to find an alternative.
As an all-purpose baking dish, Pyrex holds its own—it was the first dish we turned to for baking our gratin. But it has one main drawback: Pyrex is not broiler-safe, a necessary feature for melting cheese on many casseroles. As alternatives to Pyrex, we tested three broiler-safe baking dishes of similar size (around 3 quarts) made of clay or porcelain. All produced well-browned, evenly cooked food and each sported large, easy-grip handles for trouble-free maneuvering.
